Brewing the Perfect Cup

What we experience in the fresh brewed cup is a culmination of many meticulous steps that have been taken in growing, harvesting, processing, drying, milling, grading, roasting, packing, and storing the coffee. It would be a shame to not experience Molokai’s fine Estate Coffees as they should be as a result of improper brewing. Brewing is the final step, and really the simplest step in the process. There are many ways of brewing a great cup of coffee, but all are designed to achieve the same basic end: to extract the essence of ground roasted coffee using hot water and filtration.
 
Here are a few tips:
  1. Always store your freshly roasted Molokai coffee in a sealed container in a freezer after the package has been opened.
  2. When possible, grinding whole beans immediately before brewing makes a noticeable difference in the brew.
  3. 1-2 Tablespoons of Molokai Coffee per 6 oz. cup of water should be used depending on desired strength.
  4. Use only fresh cold water in the brewer. Filtered water is best.
  5. Coffee is an evolving beverage and should be consumed ideally within one hour of brewing. Brewed coffee should never be kept on a warmer or heat source, as it will quickly become stale.
 
French Press Pot (Plunger Pot)
Possibly the best, and simplest means of brewing coffee may be the French Press or Plunger Pot. French Press pots are available for sale in most kitchen appliance and gourmet shops as well as on the Internet through companies like Bodum. www.bodum.com. Place a measured amount of Molokai Coffee in the press pot. Water that is just under boiling temperature should be poured over the grounds so they are agitated and mix well. It is important to let the grounds steep for 3-5 minutes before pushing them to the bottom using the plunger and serving. As this method uses no paper filters, many of the natural and flavorful coffee oils are present in the brew which would have otherwise been lost in the filter.
 
Drip Machines
Drip Machines can brew very good coffee when they are properly maintained. Regular cleaning is important so coffee residue does not collect in the machine. As mentioned, it is very important to use fresh cold water in the brewer and a measured amount of fresh Molokai Coffee. Look for a drip brewer that uses an insulated pot rather than a burner to keep the coffee warm.
 
Steam Espresso Machines
Possibly the best way to get to what the Italians call “the heart of the coffee”. Espresso Machines use steam pressure to force water over the coffee grounds. Since a smaller volume of water is used for a larger measurement of coffee, the best extraction of coffee flavor is possible. Also, each brewed “shot” or serving is brewed individually, and is thus always consumed fresh. Molokai Espresso Coffee should be ground fine enough to allow steam pressure to build so the water passes through the densely packed grounds slowly. Brewing should take 15-20 seconds for a 1.5 ounce shot. This will help produce a beautiful thick gold “crema” on the surface of the fresh shot which is not only pleasant in appearance, but a sign of good body and aroma.
